Beetroot Curry Recipe

Cooking Instructions

Ingredients:

  • Gedera & Co. Beetroot Curry Kit
  • 2 medium Beetroot (approx 500g)
  • Gedera & Co. Beetroot Curry kit
  • 1 cup water
  • 1/2 an onion thinly sliced

Method:

  • Cut beetroot in to 1/2cm strips. (Refer the video for details)
  • Add the Beetroot and onion in to a heavy based pan.
  • Empty the spice blend mix , aromatics and 1 cup of water in to the pan.
  • Cook for 10 minutes on medium heat until beetroot is tender. (You’re looking for but firm texture.)
  • Prepare the coconut milk by mixing the coconut powder mix with ¼ cup boiling water .
  • Pour in the coconut milk and cook for another 2 minutes and take off the heat.
  • Taste add salt only if required.

Best served with warm rice or as a side with grilled fish or chicken.

Note: Pandan leaves are edible but they are tough and fibrous. They add an amazing aroma but are not pleasant to eat. Please remove them before enjoying the dish.
